Kalahari Truffles approached us almost a year ago to collaborate with them on the production of South Africa's most unique, most premium truffle-infused spirits.
But not just any truffle, the elusive Kalahari Truffle. It is the indigenous relative of the European Truffle and is only available for harvest 5 weeks a year.
It has a textured, Umami flavour with floral, herbaceous notes and a subtle tannin.
They work with over 15 women-lead communities in Botswana to source these desert gems. The truffles are then dried under the Kalahari sun, using hand-built solar dryers, and transformed into a one-of-a-kind spirit using only indigenous and sustainably-sourced ingredients.
